VITAMIX: LOTs of SOUPS
Tomatoe Pepper Puree
- 4 Red Peppers
- 4 Tomatoes / Medium
- 1 Onion / Large
- 5 Garlic Cloves
- 1 tbsp Tomato Paste
- 1 cup Vegetable Broth
- Basil (One handful (about 6-7 leaves)
- Serve with chicken or fish. Garnish with Fresh Basil or Basic “Cream”Slice Peppers/Tomatoes/Onion in Half and place in the oven to roast.
400 degrees (remove the garlic after 15 min)
Transfer to plate/cover w/bowl/let rest 1 hour/peel skin
Put all into Vitamix
Add Vege Broth/Basil/Tomato Paste (optional)
Basil Cream is simply Fresh Basil mixed with either Heavy Cream or Cashews.If using Cashews add water to thin out until you reach the consistency of Creamand use to garnish.

- Low Carb Cream of Pumpkin Soup (Diet Doctor) I substitute cashews for the dairy. It’s a better fat.
