Coconut Cream Fruit Tart

When I first made this tart, I followed the directions and did not cook the tart crust.  Back then I was trying to eat raw as much as possible.  The crust was too rubbery for me, kind of like those fruit rolls.  I didn’t like the texture.

Well let me just say that won’t happen again.  I loved the filling but hated the crust.  So going forward I will make a nut crust to enjoy with the wonderful filling.

Also, consider substituting Organic Maple Syrup, Xylitol or a good quality Steviafor the Agave or Date Syrup.
