LaLa’s Hummus

HUMMUSFirst I cook my gar-bonzos.  I buy them dried (it’s less expensive).  They take anywhere from 1 hour to 2 hours to cook, depending on how old they are.  It just makes your hummus taste soooo much better to do it this way.  If you don’t want to boil, just use canned BUT be sure to rinse them very well and drain.

How I cook garbanzos:
Grab a large pot.  Throw in about 4 cups of raw beans.  Add 1 teaspoon salt.  Add 1 teaspoon olive oil.  Boil til tender.  After 1 hour, I begin testing them every 15 minutes for doneness.  When they are soft, set a colander in a large bowl and drain.  You want to save the water they are cooked in to help in the mixing of your hummus.

NOW:  Throw everything into a food processor. Grind it up. If the mix is too thick, add a little water. Feel free to experiment by adding different flavors. Extra garlic, chili peppers, grilled tomatoes, grilled veggies, or artichoke hearts all make interesting, not to mention healthy, twists. Makes three cups. Serving size is 1/3 cup.

Ingredients:
  • Chickpeas (garbanzo beans), 1 cup
  • Tahini, 1 Teaspoon
  • Coconut Oil, 1 Tablespoon
  • Coconut Milk – 1/4 cup
  • Lemon, 1/2 fruit without seeds
  • Garlic, 1 clove (remove)
  • Water, tap, .33 cup (8 fl oz) (remove)
  • Salt, .25 tsp (remove)
  • Peppers, sweet, red, fresh, 1 large
  • Pepper, black, .25 tsp (remove)

NOTE:  I cooked the chickpeas myself.  I buy them from my local health food store.  Click here for more on cooking chickpeas.  They are also known as Garbanzo Beans.  Like so many other things that are “home-made”, hummus is no different.  I promise your hummus will taste soooooo much better when you cook your beans from scratch.  Depending on the age of your beans, they will take anywhere from 1 hour to 2 hours to cook.  The older the bean, the longer it will take to fully cook.
