One of my favorite Dr. Joel Fuhrman recipes is the Go Berry Breakfast Bars. They are very easy to make, and contain a number of foods that are packed with micronutrients, antioxidants, and essential vitamins and minerals. This recipe was taken from Dr. Fuhrman’s book, titled ‘Super Immunity’.
Go Berry Breakfast Bars
Serves 8
1 ripe banana
1 cup old fashioned rolled oats
1 cup frozen blueberries, thawed
1/4 cup raisins
1/8 cup pomegranate juice
2 tablespoons finely chopped dates
1 tablespoon chopped walnuts
1 tablespoon goji berries (optional)
1 tablespoon raw sunflower seeds
2 tablespoons ground flax seeds
Directions
Preheat oven to 350 degrees F. Mash peeled banana in a large bowl. Add remaining ingredients and mix thoroughly. Lightly wipe an 8X8 inch baking pan with a small amount of olive oil. Spread mixture in pan. Bake for 25 minutes. Cool on wire rack and cut into bars. Refrigerate any leftover bars.
What I like to do is make the breakfast bars the night before and put them in the refrigerator, then they’re ready to eat the next morning. They also make a great snack that you can easily take with you when you leave the house.
One other personal modification I have done is add another banana to the recipe. It gives the bars a little more substance, and makes them a little more filling. However, that is just my personal preference. I also tend to sprinkle a little cinnamon on top, mainly because I really like cinnamon!
The basis of Dr. Joel Fuhrman’s recipes are to include as many high nutrient, or nutrient-dense, foods as possible. Including nutrient-dense foods in your diet helps reduce the risk of obtaining diseases, and also leads to weight loss and overall superior health. That is why I like this recipe so much. It is filled with a number of high nutrient foods, that are also high in antioxidants, and the end result is a great tasting breakfast bar!
Super Immunity
As I mentioned earlier, this recipe was taken from Dr. Fuhrman’s book, ‘Super Immunity’. This book details how your diet has a direct correlation with the diseases you obtain throughout your life. It touches on how your diet affects all illnesses, from minor colds and headaches to cancer and heart disease.
